If you're like me and always have bananas that are too ripe to eat and you're constantly looking for creative ways to use them- you need to make this banana bread. Scarlett loves bananas one day and then won't touch them the next...resulting in a lot of bananas uneaten and ripe in our house. I made this recipe up and had to improvise because I didn't have any eggs and what came from it was SO delicious. If you make this please let me know and tag me. Use the hashtag #bombananabread
Ingredients:
3 over ripe bananas- mashed
1 cup applesauce
2 tablespoons unsalted butter- melted
1/2 teaspoon almond extract
2 cups of flour
1 cup sugar
1 heaping teaspoon cinnamon
1 teaspoon baking soda
a pinch of salt
Preheat oven to 350 degrees
In a large mixing bowl mash your bananas, then add applesauce, melted butter and almond extract. Mix until combined and set aside. In a separate bowl combine all your dry ingredients. Slowly add the dry mixture to your mashed bananas mixture until mixed well. Pour into a loaf pan and spread evenly. Bake for 30-35 minutes or until toothpick inserted comes out clean- mostly. I like it a little undercooked and it's ok with this because there's no eggs in this recipe.
pro tip: Sprinkle a little extra sugar on top before baking to create a yummy sugary crust topping.
